Instant ramen is transformed by a glossy, nutty brown butter miso broth, a soft jammy egg, and a drizzle of chili crisp that wakes up your senses without waking up the house. Ingredients

  • 1 block instant ramen noodles (seasoning packet discarded)
  • 2 tbsp unsalted butter
  • 1 tbsp white miso paste
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 2 cups water or low-sodium chicken broth
  • 1 large egg
  • 1 clove garlic, finely grated
  • 1/2 tsp grated fresh ginger (or 1/4 tsp ground ginger)
  • 1 tbsp chili crisp oil (store-bought)
  • 1 spring onion, thinly sliced
  • 1 tsp toasted sesame seeds
  • A small handful of baby spinach or frozen corn (optional, whatever's in the fridge)

Instructions

  1. Bring a small saucepan of water to a boil. Gently lower in the egg and cook for exactly 7 minutes for a jammy yolk. Transfer to a bowl of cold water, peel, and set aside.
  2. In a medium saucepan over medium heat, melt the butter. Continue cooking, swirling occasionally, until it turns a deep golden brown and smells nutty — about 3–4 minutes. Watch it closely; this is the magic step.
  3. Remove the pan from heat briefly and whisk in the miso paste, garlic, and ginger until smooth. It will sizzle — that's perfect.
  4. Return to medium heat and pour in the water or chicken broth. Whisk to fully combine, then stir in the soy sauce and sesame oil. Bring to a gentle simmer.
  5. Add the ramen noodles and any optional vegetables (spinach, corn). Cook for 2–3 minutes, gently separating the noodles with tongs, until just tender.
  6. Pour everything into your favourite bowl. Slice the jammy egg in half and nestle it on top.
  7. Drizzle generously with chili crisp oil, scatter over the spring onions and sesame seeds, and serve immediately — standing at the kitchen counter is fully encouraged.
